Open that album to see all your photos. Click on the photo you want to delete, select the hamburger icon, and tell it to delete. It will warn you that it will delete from across Google.

When I re-opened Google Photos, it asked if I would like to sync my photos. It then started taking a long time to process this (when there are 0 new photos). I was concerned that it would re back up all 21k photos and create duplicates of all so I immediately deleted the app.
